I am going to make Sicilian-style steaks tonight. It's how we had them when we were there recently.

You first sear the steaks in a cast-iron pan with EVOO, butter, garlic, salt and pepper, and then transfer to a 400 degree oven for 8-10 minutes to finish. After resting, dribble on some lemon juice.

Served with my wife's "award-winning**" mashed potatoes.
